Our top-seller, and a favorite of many of New York's best-regarded restaurants, our Imperial Golden Osetra is a large grain, rich, buttery soft pearl with a delicate oceanic finish. 

Sustainably farmed in Isreal, the Osetra sturgeon takes fifteen years to mature before it's eggs can be harvested, and it's scarcity is second only to the endangered beluga. There are two grades of Osetra caviar, with the rarer Golden grade comprising only around 5-10% of the yield.
