Our Grandeur Golden White Sturgeon Caviar (acipenser transmontanus) is by far our finest American caviar. Representing only 10% of the harvest, these large, “tiger eye” golden eggs are the result of a treasured lineage of sturgeon. Native to the Pacific Northwest, these sturgeon typically only produce jet black to grey caviar which is why we treasure the anomaly of these bright golden eggs. Caviar pearl size is a minimum of 2.5 mm and flavors range from toasted almond to butter. The finish is clean with no lingering brine. Simply put, the best.
