Our Grandeur Golden White Sturgeon (acipenser transmontanus) is by far our finest caviar. Representing only 10% of the harvest, these large, “tiger eye” golden eggs are the result of a treasured lineage of sturgeon. Native to the Pacific Northwest, these sturgeon typically only produce jet black to grey caviar which is why we treasure the anomaly of these bright golden eggs. Our white sturgeon are sustainably farmed on the Snake River in Idaho where the cool water temperatures remain constant all year. This provides us with optimal harvesting in the Spring and Autumn. Caviar pearl size is a minimum of 2.5 mm and flavors range from toasted almond to butter. The finish is clean with no lingering brine. Simply put, the best.
