Lingonberries are a variety of wild mountain cranberry. While traditional cranberries tend to have a quite lopsided and sour flavor profile that requires ample sweetening to attain balance, lingonberries pack more natural sweetness and a touch of bitterness, with an altogether rounder character that makes them very versatile for jams and compotes like this one.
Although lingonberries are particularly popular in Scandinavian cuisine, they are found throughout northern forest and tundra landscapes all over the world. This compote’s tart, bright, complex flavor profile makes it a wonderful counterpoint to meats like game or poultry, but it is equally delightful smeared straight onto bread.
