Bacalao is the cherished Mediterranean rendition of dried cod. Our partner is called Alkorta, based in Gipuzkoa, Spain. When processing the wild cod, the fish are salted and left to cure until they have lost up to 40% of their moisture. After curing, the process is reversed and the desalting process begins, taking another week to rehydrate and extract the residual salt. Bacalao is synonymous with the famous Basque dish, Pil Pil. It is also great stewed with tomatoes, or dredged in flour and pan fried.
