An absolute favorite of ours for whole-grilling or roasting, we are fortunate that Black Sea Bass remains among the most sustainably managed species on the East Coast. They return to northern reefs and oyster beds each springtime, after spending the winter in the south. Ours is caught off the coast of Martha’s Vineyard, conjuring a stirring, austere impression from the water to the plate.
Black Sea Bass have an enviable diet of crab, shrimp, clams, and other small fish, all of which contribute to a firm texture and a delicate, well-balanced flavor profile. In addition to its flesh, the skin, liver, and roe are all edible and delicious. Different culinary traditions up and down the East Coast represent the Bass in a wide range of preparations, but we particularly appreciate any approach that preserves the fish’s striking, whole-body appearance. To fuse this northeastern fish with East Asian technique, we recommend grilling the Bass on high heat at a safe distance from the flame, and adorning lightly with spices from our Korean and Japanese pantries.
