Capriole Farm was started by Judy Shad and her husband Larry when they realized that their small goat farm was producing more milk than they could possibly consume. What started as a small project of simply finding ways to preserve the milk and gifting it to family and friends, Judy then decided to expand and built a small creamery on her and her husband’s farm in rural Indiana.
Today, the farms producing milk for Capriole cheeses are small, family-owned farms that allow their goats to roam freely. All of their cheeses come from a single heard of goats, all of whom Judy knows by name.
Piper’s Pyramid is an homage to her granddaughter with red hair and freckles. This creamy goat’s milk cheese is dusted with paprika and has a paprika line through-out the cheese giving this grassy, light, subtle, yet nuanced cheese a kick.
Made with pasteurized goat’s milk, with a geotrichum rind, this cheese is modeled after one of the Loire’s most elegant cheeses, Valencay. Pair with a glass of Chenin Blanc or Bubbles of your choice, this cheese is guaranteed to impress.
