



Diva is an award-winning, semi-soft cow’s milk cheese produced by Arethusa Farms in Connecticut. With a lusciously smooth, creamy paste and a burnt-orange rind, Diva presents nutty and oniony fragrances mellowed out by a flavor profile that deftly balances sweetness and tang. When sliced, the immaculately textured interior oozes out from the center, conjuring up a decadent image perfectly matched by the cheese’s elegance on the palate. It earned its name by impressing one of the farm-restaurant’s servers so much that she described it as “singing out to her like a great opera singer… like a diva.”
Arethusa came to its current ownership in 1999, when George Malkemus and Anthony Yurgaitis purchased the farm from the Websters, who had kept it in the family since 1868. George and Anthony agreed to sustain the name “Arethusa,” after the small pink orchids that grew in a swamp on the land. After establishing their own dairy herd in the early 2000’s, Arethusa began making cheese, milk, and yogurt from 2009 onward, and today they also operate a world-renowned restaurant on the farm called Arethusa al tavolo.
