This Qing Xin cultivar oolong tea was grown in the Ali Shan region of central Taiwan. It was brought in as a green, unfinished tea, and it was roasted to a medium/dark level locally in Dallas, Texas. The roasting process takes several days to complete, and is the epitome of low & slow cooking. The finished tea is warm and toasty, and the medium/dark roast highlights notes of dried stonefruit, amber honey, and maybe just a touch of dried flowers over the toasted sweet grain base note with a lingering, toasty, and fruity-sweet aftertaste.
