This twist on the classic Italian prosciutto is rich and intensely flavorful. Smoking Goose utilizes only premium duck magret, which refers to the the breasts of ducks raised for foie gras, from premium Moulard ducks, which are prized for their succulent fat.
The breasts are seasoned with sea salt, star anise, all spice and orange peel, and then dry-cured and hung to dry until the flavors become complex, and the texture is firm but silky.
Perfectly sliced super thinly, this is ideal as part of a charcuterie platter with cheeses, dried fruit and nuts. For cooking, this is exceptional used just like regular prosciutto, wrapped around asparagus, meats or draped over melon.
