Farmed in the southern Cape town of Yarmouth, Massachusetts, these Fiddlehead Oysters have a delightfully dramatic tear-drop figure with deep and wide interior pockets housing succulent, juicy meat. Their flavor is brisk, briny, and high in minerality, with subtly herbaceous crispness. They maintain such an invigoratingly saline character thanks to the floating chambers where they’re raised, instilling stronger essences of the water and the tides than of other flora along the seafloor. Thanks to their complexity and brightness, we like to either keep these simple and straight out of the shell, or to quickly toss them on the grill to accentuate the dormant umami that their briny minerality traps til they’re heated up.
