Tilefish are found along sandy coasts all the way from Canada to South America, and Golden Tilefish are the largest, plumpest, most flavorful of them all. Ours are long-line caught off the Montauk Sound, where abundant wild populations inhabit the continental shelf. Delightfully flakey, with a semi-firm texture and a sweet, moist flavor reminiscent of crab or lobster, Tilefish are amenable to myriad preparations and cuisines. Their shellfish-heavy diet ensures a delicate, balanced flavor profile, while their texture and medium-sized flake make them sturdy enough to grill or broil.
In addition to the meat itself, the Tilefish’s skin, liver, and roe are all edible and delicious. Freshly caught and delivered whole, this selection makes for a stunning centerpiece no matter how it’s prepared.
