Hanamaruki's Liquid Shio Koji is a unique and convenient rendition of traditional shio koji, the mold famously fermented in the production of miso, soy sauce, and sake. The mold itself is cooked rice inoculated with Aspergillus Oryzae, which Hanamaruki then places in a sake bag and presses to yield only the enzyme-rich liquid. You can use this to marinate meats, season broths or vegetables, or to deliver an invigorating punch of umami to anything that needs it.
