Wahoo, also known as Ono, is found throughout the Pacific. Hawaii is the most coveted fishing region for this species. Quality Ono is synonymous with the region as "Ono" means "Good to eat," in Hawaiian.
The meat has a mildly-sweet taste and firm texture, with a moderate fat content. Though closely related to the mackerel, Ono is extremely mild. In the wild, they are characterized by their elongated tuna-like body and dorsal fin, short snout, and dark blue-green speckling on the top of their heads. An incredibly strong and powerful fish, the Ono can swim up to 60 mph.
This fish is terrific eaten raw, sashimi style. Also, with its impressive circular flakes, grilling, poaching, baking, and sauteing are great ways to eat Ono. All our Ono are sustainably long line caught.
