100% Iberico pig is an original breed from Spain known as, "Pata Negra." Farmed in Southwestern Spain, a Mediterranean ecosystem, among century old Holm and Cork Oak Trees. Animals enjoy a free-range environment of a minimum of 1.8 acres a piece, feeding on acorns and other natural resources. During the Montanera season from October through February they feed on only acorns doubling the weight of the animal. The high oleic acid content of the acorns gives them an incomparable flavor and texture. This pig doubles its weight eating acorns and grass. Making it the finest and most luxurious pork meat in the world.
