Hardly any fish more strongly or sweetly conjures a sense of place than hard shell lobsters do for Maine. These lobsters are fished from the waters surrounding Portland, then briefly stored in fresh, clean water before shipping to you directly from the harbor. With firm, dense texture and a generous ratio of meat per pound, we believe these are the most classically satisfying lobsters that the east coast has to offer.
After timber, fishing is Maine's biggest industry, and no pastime is more intrinsically woven into its culture or reputation. Since the 1800's, lobster has been Maine's most iconic catch, ascending in popularity particularly among the nearby metropolises of Boston and New York. The lobster caught here and elsewhere along the North American Atlantic coast is Homarus americanus, with a large and long body and huge, weighty claws. Thanks to the region's exceptionally cold waters, lobsters here mature more slowly than in other parts of the world, giving the meat a firmer, denser texture that lobster lovers adore. With hard shell lobsters in particular, the cool temperatures plus their strong shells prevent too much salt water from being absorbed into the meat, making for a cleaner and more satisfying culinary experience.
