Fluke is a flatfish that swims along the seabed, pushing both of its eyes to one side of its body as the fish grows up. This anatomical eccentricity earns Fluke the nickname of “left-eyed flounder,” and this large, whole fish from Long Island will make a striking impression even before it’s prepared.
Flatfish are coveted in cuisines throughout the world, but rampant overfishing has made many of the planet’s most prized species exceedingly rare and expensive. Fluke shares the satisfying, scrumptious qualities that keep other flatfish in such high regard, but is far more available and affordable, especially in the North Atlantic. The Long Island Sound, where this large Fluke comes from, is exceptionally fertile, famed territory for a wide variety of Game Fish. Because the depths in the middle of the Sound are offset by relatively shallow tidal entrances at each side, this body of water is home to a tremendously diverse population with favorable accessibility to diligent, knowledgeable fishermen.
