Monkfish is a distinct anglerfish found throughout the northwestern Atlantic. Ours are wild-caught off the coast of Maine, where they can grow several feet long and as heavy as fifty pounds. Their strange shape places the bulk of their meat in their tails, but some cuisines put their livers and cheeks to great effect, as well. The tail’s prevalent flavor profile is often compared to lobster — sweet, mild, and hardly fishy at all, with a sturdier and less flaky texture than many other fish. The sum of all these traits makes Monkfish truly one of a kind, and a wonderful way to give tried and true seafood dishes a refreshing twist.
