Cured by hand and smoked in brick kilns, this salmon comes from frigid, northern Atlantic waters off the coasts of eastern Canada. As is traditional for Nova salmon, the Marrian family’s rendition is very gently cold smoked, yielding a velvety texture and a striking color that steals the show on any smorgasbord.
Since elevating his fish-curing hobby to a full-fledged and swiftly successful business in the early 1980’s, Simon Marrian has moved halfway around the world and kept his recipes within the family, now led by his son, Jason, using the same original cold smoker to this day. All of the Marrian family’s fish are vibrant, impeccably flavored, perfectly textured, and well-balanced enough to be just as delightful on their own as with traditional accompaniments—whether strewn atop a bagel, tossed into a salad, or laid over rice. In particular, Nova salmon’s mild and elegant brine makes it a fantastic counterpoint to bright accompaniments like capers, red onions, and tart yogurt or cream cheese.
