True Parmigiano Reggiano is one of the world’s most cherished and distinct flavor profiles, a cheese that scarcely needs any introduction. This particular selection comes from Latteria Trulia, located in the lower plains of the Apennine Mountains in the province of Reggio Emilia. With a scrumptiously gritty texture, resonant and savory finish, just a touch of lactic brightness and dried fruit sweetness, this well-rounded 24-month rendition delivers all the hallmark traits of parmiggiano with aplomb.
Latteria Trulia was founded in the 1940’s by the Pavesi brothers, who converted the ownership structure from private to cooperative in the 1960’s. Over the course of the twentieth century, rural flight cut the cooperative down to less than half of its starting membership, but their reputation for quality and integrity remains unvarnished. In the wake of 2012’s devastating earthquake, a tragedy that destroyed Latteria Tullia’s warehouse and roughly seven months worth of production (~20,000 wheels), they chose to launch an e-commerce website, exposing their cheeses to a far wider audience than ever before.
