Hokkaido Wagyu also known as 'Snow Beef', comes from the North of Japan. This beef is fattier than other wagyu varietals due to colder temperatures in this region.
Wagyu is like Wine. Every region in Japan produces its own unique cattle from regional differences between the varying prefecture states.
The Kuroge Washu Wagyu cattle that we source from the Motobu cooperative are fed a unique fermented feed that contains added lactic acid bacterium from leftover lees and grains from the Orion Beer company’s monthly production runs. This unique feed gives our Okinawa wagyu a higher ratio of unsaturated fatty acids compared to other prefectures resulting in sweeter flavored cuts.
