Atlantic Razor Clams are iconic, striking shellfish. Rectangular in shape, like a straight-edged blade, they are superbly satisfying right out of their shells. While Pacific Razors are larger and meatier, those from the Atlantic are refreshingly approachable and sweet, with a mild salinity that makes them highly versatile as an hors d'oeuvre or main dish. Pan-cooking in oil and finishing with bread crumbs is a popular presentation, but we especially enjoy highlighting their flavor in a ceviche, dressed simply with citrus, herbs, and a touch of heat from fresh chile or flakes.
Catching Razor Clams is a delicate, meticulous process. Unlike other shellfish, they are too brittle for dredging, so fishermen must harvest them by hand after employing an array of tactics to bring them within arm’s reach of the surface. When the weather and temperature are right, harvesters must wait for a low tide during daylight in order to see where in the seabed the clams have burrowed. Once spotted, quick work is imperative - a well-timed splash with salt water will prompt the Razors to emerge just enough to snag if the harvester is swift enough not to scare them even deeper into the sand.
