The process of palm sugar production is similar to maple syrup: Indigenous Cambodian Palmyra Palm trees are tapped, and its sap is cooked until reduced. It has a rich nutty caramel flavor, is low on the glycemic index and has a thick yet buttery consistency. Use as a replacement for refined sugar or as a sweetener for cooking, baking and seasoning.
