This tea was brought in as a green, unfinished tea, and it was roasted to a light/medium level locally in Dallas, Texas. The roasting process takes a very low temp/long cooking approach over a period of several days of heating and resting. The finished tea retains elements of fresh, light floral aromas & flavors that emerge as a flowery green, slightly acidic backbone from the green base material, but the slow, careful roast brings out a juicy, lightly toasted, nutty, honeyed roundness in the infusion that some claim is reminiscent of Sauternes. The honeyed, bittersweet, & subtly floral finish lingers beautifully on the palate.
Note: pairs beautifully with a luscious, ash ripened goat cheese.
