Persian Sevruga Caviar

Among modern connoisseurs, Sevruga Caviar (Acipenser Stellatus) is the smallest, most densely flavored, and perhaps the most intensely coveted variety of sturgeon roe. With a silvery glow and an exceptionally fine grain, Sevruga meets the eye with a mesmerizing sheen, accompanied by a firm texture, creamy and nutty flavor, and an unparalleled expression of the sea’s crisp, bright, invigorating salinity and umami. When crushed, the roe releases an oil that can be sopped up wonderfully with crusty bread, and it finishes with a buttery, residually sweet presence on the palate perhaps best compared to exquisite, full fat ice cream.
