Trifecta is a mixed cow and sheep’s milk triple créme cheese made at Old Chatham Sheepherding Company in the Hudson Valley, New York. Indulgently rich, spreadable, and vaguely evocative of Camembert, this cheese delivers just enough funk to offset its extravagance with a beer-washed rind. This adds mushroomy, turnipy, sweet rootsy flair to a creamy, vegetal backdrop that brushes beautifully onto a baguette. Nonetheless, thanks to the atypical choice to inoculate this cheese with a white fluffy mold rather than a more traditional red bacterial linen, the final character is still classier than it is barnardy, making it more versatile for a wide range of palates than honed for competition or classification.
Crown Finish Caves is an aging facility located in Brooklyn, New York.
