Vermillion Rockfish, caught by rod and reel off the picturesque Channel Islands, are prized for their light, flaky texture. Low in oil content, these bright red fish are incredible for roasting whole or serving as a fillet that boasts a sweet, almost nutty flavor with delicious skin.
The five islands of Anacapa, Santa Cruz, Santa Rosa, San Miguel and outlier Santa Barbara make up the Channel and are designated collectively as a National Park, with a multitude of marine sanctuaries and marine protected areas.
