Regular price $85.00

A collection of U.S. made cheeses brought together to promote all of those in the cheese supply chain that have been affected by the Covid-19 pandemic. 20% of each box sold will be donated directly to US farmers or US cheesemakers. Donations will be going to Chicago's Urban Grower's Collective.

Invierno by Vermont Shepherd is a natural-rinded, raw sheep and cow milk cheese. It is richly herbaceous with buttermilk notes and lightly caramelized with a wonderfully toothsome texture. (1 pound)

Red Rock by Roelli Cheese Haus is an award winning American Original and not one you will forget from Master Cheesemaker Chris Roelli. Quite unique, Red Rock’s vibrant, red-orange hue of cheddar is accompanied by light blue veining that is not peppery and bright but more mellow with pistachio undertones. (1 pound)

Fleur du Prairie by Prairie Fruits Farm and Creamery is a delicate younger goat milk cheese with a geotrichum candidum rind. It is topped with dried wildflowers adding an herbaceous profile to this bright and lactic cheese. (1 piece, approximately .33 pound)

These cheeses will arrive to you accompanied by our 3oz Regalis Tennessee Black Truffle Honeycomb and a 4.5 oz hard salami made by Elevation Meats in Colorado (contains pork).

For our Signature Sourdough Cracker Recipe:
  • 1 cup sourdough starter
  • 1 cup flour (any flour works, I use ½ whole wheat and ½ AP)
  • 4 T Olive Oil (any liquid fat will work)
  • 1 teaspoon salt
  • 2 T sesame seeds
  • 1 T poppy seeds
  • Coarse salt, for garnish
Mix starter, flour, olive oil, seeds, and salt together in a bowl until cohesive dough forms. Knead for 5 minutes to create smooth dough. Cover and rest in fridge for 30 minutes. Preheat oven to 375. Roll dough to 1/8” thickness, prick all over with a fork. Cut to desired shape and season liberally with coarse salt. Place on parchment lined baking sheet. Bake for 15-20 minutes rotating sheet tray halfway.
