Spiny Lobsters aren’t as familiar to most Americans as large-clawed, cold-water Maine Lobsters, but we implore you to make room on your tables for both. With the bulk of their meat coming from the tails, Spiny Lobsters are firmer in texture, tend to be sweeter than their Maine counterparts, and have a generous meat-to-shell ratio. Perhaps the most noteworthy comparison of all — they tend to be much easier to deconstruct than Maine Lobsters, making them a perfect choice for those who want to enjoy exquisite lobster without braving the fussy, tedious gauntlet that often precedes indulging in the more classic American variety.

Spiny Lobsters remain in sustainable supply in the Pacific waters off California coasts. From here, the overwhelming majority are sent to Asia, where they’re prized for sashimi and crudo. This overseas demand does drive domestic prices up, but we’re always thrilled to get our hands on some when we can, and believe their quality fits the price.
