This type of spiny lobster is prized for its raw applications for sashimi and crudo. The meat is translucent, sweet and extremely coveted in Asia, with over 95% of the California production being exported there, which is why the price can be expensive. This larger species from California is the more sustainable choice compared to "spinies" found in tropical and subtropical waters. Their tail meat extends well into their body providing excellent yield.
