These pork cheeks come from free-range Ibérico pigs that wander the countryside of southwestern Spain feasting happily on sweet acorns. The 'carrilleras' are actually on the leaner side but tote the rich, robust flavor of acorn-sweetened fat. When you braise this cut, the flavors slowly meld into an incredibly unctuous and tender meat that marries itself perfectly for braising with a generous amount of foraged mushrooms.
