No flatfish enjoys more esteem than the Turbot, long cherished in European cuisine and increasingly popular around the world as well. This selection is sustainably raised in South Korea, borrowing French breedstock appreciated for its sweet and mild flavor, similar to Halibut, but with a significantly more refined expression of this flavor perfectly capable of minimally seasoned preparations. When cooked, these flavors are tucked into moist, tender meat that flakes into large and scrumptious morsels. To make the most of this exquisite Turbot, we look to Basque and French recipes, and in the summertime, we love to throw the entire fish on the grill.
