Oroshiki (下ろし器) are traditional graters used for grating fresh wasabi, ginger, Japanese yam, and horseradish roots.
Typically made with shark skin, it's sandpaper like texture is the perfect abrasive for grating wasabi into an ultrafine paste. With Wasabi in particular, the friction that's created during this abrasive grinding process actually generates a lot of the spicy heat flavors synonymous with fresh wasabi. Grating fresh wasabi on a metal or ceramic grater does not produce the same flavor compounds.
These particular Oroshiki graters are made with Tiger Manta Ray skin, which many consider the ultimate crown jewel of material, and Japanese Elm wood (zelkova serrata).
To use, peel the exterior skin off of the wasabi root, and grate in a circular motion using firm pressure, then scrape off the grated wasabi with a grater brush. The traditional way is starting at the stem side first. The tender stem can be pickled or eaten raw.
