



Zabuton is an often overlooked butcher's cut, coming from the underside of the chuck. Zabuton translates to "little pillow" in Japanese, referencing its highly marbled fat content, yielding a texture as soft and tender as a traditional tatami cushion. This cut also possesses an intense flavor that deepens when roasted slowly over a charcoal grill.

With herds grazing on thousands of acres, American Wagyu represent hybrid cattle breeds from America and Asia — American Blank Angus and Japanese Kuroge Washu.
