Zabuton, meaning "cushion" in Japanese, is cut from the chuck flap, one of the most heavily marbled cuts on the animal outside of the ribeye. Ours comes from our Australian Wagyu program, prized for a rich, buttery texture at a fraction of the cost of Japanese Wagyu. Slice thin for yakiniku-style grilling, or sear whole and finish in the oven for a showstopping roast.
Raised on pasture in Victoria and Tasmania for a minimum of 60 months, this Australian Wagyu program develops exceptional marbling and a deep, beefy flavor. All cattle are Non-GMO and raised without antibiotics or added hormones.
