Sourcing

Sustainably farmed in Moldova, these roe-producing sturgeon (acipenser gueldenstaedtii) are “milked” at peak fertility rather than harvested, ensuring each fish is able to develop multiple egg clutches while minimizing environmental stressors. This also ensures absolute consistency from batch to batch.
