Found in less than 5% of the total harvest, our Salt & Pepper Osetra Royale is a naturally occurring genetic rarity distinguished by its remarkable visual contrast, two striking pearl colors emerging from the very same mother fish. A true anomaly within the caviar world, this uncommon expression offers both exceptional beauty and scarcity in equal measure.

The flavor remains unmistakably Osetra: refined, deeply marine, and richly buttery, with the signature firm pop that gives way to a clean, lingering salinity. Its dramatic appearance makes it especially captivating when served simply, allowing the caviar’s natural contrast to become part of the presentation, though its balanced profile lends itself effortlessly to more composed applications as well.

Sustainably farmed in Moldova, this roe-producing Russian sturgeon (Acipenser gueldenstaedtii) is cultivated using our advanced no-kill harvesting method. Rather than sacrificing the fish, mature roe is gently “milked” at peak fertility, allowing each sturgeon to continue developing future egg clutches while minimizing environmental stress and preserving the long-term health of the stock. This meticulous process ensures remarkable consistency in texture, integrity, and flavor—while occasionally yielding extraordinary natural anomalies such as this.
