These jowl steaks are cut from the center of the pig’s cheek. Their complex, marbled fat will crisp up deliciously when pan-fried, and will render beautifully for a variety of other uses. The jowl itself yields pork with a rich, succulent texture.

Berkshire is a heritage pig breed from Berkshire County, England. Prized for their exceptional tenderness, deep color, complex fat marbling, and richly flavorful meat, they have gained recognition as pork’s closest approximation to Wagyu beef. In the nineteenth century, Berkshires were first introduced to Japan and the United States, and Japanese Kurobuta pork continues to be the prime choice for elite chefs in Japan and beyond.
