Thought of as one of the sea's most sublime delicacies, urchins are hand-harvested by deep sea divers with small-scale tools. This results in very little unintended catch of other species and does not damage the ocean floor, thus leaving a smaller ecological footprint than most of the more popular seafood items.

Each round, spikey shell contains only 4-5 delicate tongues of edible uni in different shades of orange and golden yellow. These hand-foraged sea urchin have a sweet, buttery flavor and clean ocean aroma; with a luscious texture that melts in your mouth.  Many people describe it as an umami rich taste of the very essence of ocean.

Urchin's spiny shells can make getting to uni tongues seem like a daunting task, but a few tips will make you a pro in no time: 

1. Always wear gloves while you carefully trim off the sharp ends of the spines to protect your hands from accidental stings. The gloves will also prevent your hands from being dyed from the urchin's dark purple exterior ink.
2. Working with it's mouth-side-up, cut around the opening and remove the top of the shell with regular kitchen scissors, revealing the uni suspended alongside the five points of the inner shell.
3. Pour out all of the fluid into a bowl, as it will catch any tongues that might have fallen loose. 
4. In a separate bowl of ice cold salted water, carefully use tweezers or a spoon to scoop out the tongues and gently rinse in the water to remove any undesirable bits. 
5. We recommend serving them immediately on toast with a schmear of butter or tossing into hot pasta to create an emulsified sauce.
