Golden Karasumi or Bottarga in Italian is the salt cured, air dried roe sac from the grey mullet fish. Florida is the largest producer of grey mullet in the world and almost all foreign production is purchased from the Florida Cape. This particular specimen is Sardinian cured via Florida. Delicious micro-planed on just about anything, bottarga first tastes like the essence of the ocean finishing off with a powerfully complex umami bomb.
