Crown Toro Hamachi is an ultra premium sustainably sea-farmed Hamachi processed in Uwajima, Japan. Slaughtered using the famed Ike Jime process; a multi-step procedure that when done correctly helps to preserve the flavor and texture of the fish without stress. It’s the most sustainable and humane method of killing a fish and avoids the surge of lactic acid in their bodies which damages the integrity of the flesh.
Hamachi naturally has a clean, buttery-fresh firm texture prized for all sushi and sashimi preparations, and is delicious when cooked.
