Morels are beloved for their meaty texture, nutty flavor, and iconically honeycombed appearance. Over the course of the spring and early summer, different Morel varieties come in and out of season, with Gray Morels ordinarily the latest sub-species to appear in any given region.
There's much to love about every color Morel, but the Grays are terrifically plump and large, making them wonderful for stuffing, and their double-walled structure gives them an even meatier texture and deeper flavor than their earlier-season counterparts.
