Product Description

These pork cheeks come from free-range Ibérico pigs. These pigs wander ample pasture in the Southwestern Spanish countryside, with diets largely consisting of sweet acorns. The 'carrilleras' are on the leaner side, but preserve the rich, robust flavor of acorn-sweetened fat. When braising this cut, the flavors will gradually become incredibly juicy and tender, a perfect match for foraged mushrooms.
