Regalis x Melissa Rodriguez

Melissa J. Rodriguez is a Michelin Star chef, and the Executive Chef of Del Posto in New York City, a position she’s held since 2017.

A graduate of the Culinary Institute of America, Melissa began her career at Daniel Boulud’s flagship French restaurant, Daniel, where she rose to the rank of sous chef. She has also worked with Executive Chef Cornelius Gallagher at Oceana and Elaine Bell Catering in Napa, California. Melissa finds joy in exploring new foods and cuisines and sharing what she’s learned. She is focused on the importance of her kitchen culture and her impact within the kitchen. Melissa has spoken about leadership to young professionals at Google and students at Yale University. She is a member of Les Dames d’Escoffier NYC and on the culinary council for Ment’Or.

This salted nori is full of protein and fiber, with a slightly smokey flavor reminiscent of crustacean shellfish. Preserved only with salt, we recommend three thirty-second cold water rinses before preparation.

Fresh Hungarian Honey Truffle

Hungarian Honey Truffles (Mattirolomyces terfezioides) are a rare variety, found only under black acacia trees in Hungary. They earn their nickname for their resonantly sweet, honeyed aftertaste, layering over cozy aromas of fresh brioche and quality vanilla.

Like White Truffles, Honey Truffles do not have an exterior skin, making them very delicate. With a sugar content so high that their sweet flavor takes on an almost artificial character, they are excellent when shaved over ripe fruit, gelato, or pastries, while retaining the potential to lend an intense burst of sweetness if sprinkled onto an otherwise savory dish. Another way to make the most of their intense profile is to infuse them into a simple syrup or maple syrup, delivering a totally distinct end result.

Unlike other truffle varieties, Honeys become softer and sweeter as they ripen, not reliant upon the retention of firm texture or density to stay delicious.

Maine Sea Urchins are close relatives to the Hokkaido Sea Urchins found off the shores of Hokkaido, Japan. Petite in size, this Bafun Uni produce small tongues with crisp, concentrated flavor. Sea Urchin is highly prized throughout Japan, with the vast majority of Maine’s production exported weekly to Toyosu market. Luckily, before that step, Regalis reserves a portion of the finest trays to be kept stateside. Fresh shipments are sent to us daily, ensuring that ours are the top quality available.
