Ovuli — "Caesar's Mushroom"

Also known by the triumphant nickname of “Caesar’s Mushrooms,” Ovoli are beloved Amanita mushrooms most famous in Italy. Subtly and pleasantly fragrant, Ovoli’s first impression is made with its distinctive, eggy appearance — their color is a yolky reddish gold, and their shape is exceptionally bulbous. If thinly sliced, they are delightful even raw, with a darn-near yolky sweetness to match its color, but when cooked, they take on a wonderfully nutty flavor, reminiscent of the soft sweetness of roasted chestnuts.
