Spring and summer are thrilling times to forage for alliums, with myriad variations of onions and garlic found flowering and sprouting throughout the wild. These spring onions are called three-cornered leeks, or snowbell, and are distinguished by their triangular flower stem and drooping, bell-shaped white flowers. The insides of their petals have vertical green stripes, allowing foragers to quickly distinguish them from similar varieties.
Every bit of these snowbells are edible and delicious. The stems are tender, the leaves are crisp, the flower buds and bulbs are crunchy, and all parts have a spicy, garlicky fragrance. Like chives, baby leeks, and other spring onions, three-cornered leeks have a versatile enough flavor profile to be eaten raw or lightly sautéed.
