Sourced from Tokyo’s Toyosu Fish Market, these squids are delivered to you fresh. Toyosu Market, one of our key supply chain touchpoints for Japanese seafood, is among the largest and most storied fish markets in the world. Although Toyosu only opened in its current location in 2018, it sustains the legacy of the Tsukiji Fish Market, in operation since 1935. Today, the market is massive and state-of-the-art, containing three distinct forums within its overall scope: a wholesale market, an auctions market, and a fruits and vegetables market. Though regular consumers aren’t able to participate in auctions, the facility was constructed with a second-floor viewing deck, amplifying the pomp and circumstance of the bidding. To date, the highest bid at Toyosu was a whopping $3.1 million dollars, for a Giant Bluefin Tuna.
