Murasaki Uni is the cleanest and sweetest of the Uni varieties, with a creamier texture and a more elegant balance of flavor than its more common Bafun counterpart (though some do prefer the intense umami sensation of the latter variety). This Murasaki Uni comes from Red Sea Urchins, diver-caught off the coast of Baja California in Mexico.
While Japanese Uni remains the gold standard around the world, Uni from the eastern Pacific is widely beloved by chefs for its similarly complex, elegant profile and slightly softer, creamier texture, often making it even better-suited for making sauces.
