Kudzu, also known as arrowroot, has long been used as a medicinal herb in Asia to treat migraines, high blood pressure, menopause symptoms, and the common cold. Hanega uses Kudzu exclusively grown on Mt. Bohae in Geochang, KyungNam.
Though Kudzu is technically a root vegetable, it has a subtle earthiness balanced by the sweetness of added watermelon, which lightens up the overall flavor of the vinegar. It makes a great vinaigrette, though goes equally well with a glass of sparkling water.
